We've all been sick so I made soup. Nothing better to fill bellies and warm hearts.
1 medium onion, chopped
1 clove garlic, minced
1 tsp ground coriander seeds
1 tsp ground cumin seeds
5-6 stalks of celery, finely diced
1.5 litres of warm water
250g red lentils, rinsed
On medium heat fry the spices, onion and garlic until soft.
Add the celery and cook for a few more minutes.
Add the water and lentils.
Bring to the boil.
Simmer gently for 40 minutes.
