Kale Chips
I'm on a quest to expand the variety in my diet and still stay healthy and low GI. I've been seeing Kale Chips in the local health food store for a while now. Unfortunately, they have sesame oil which doesn't agree with my belly. So this morning I whipped up a batch myself with a bunch of lovely, in season kale from the local market. Super simple and super easy.
Kale chips
1 bunch kale
2 tbsp olive oil
Pink Himalayan salt
Preheat oven to 180 C (350 F).
Line two baking trays with baking paper.
Wash kale.
Remove central ribs and tear into small pieces.
Pop kale in a large mixing bowl.
Add oil and salt.
Toss to coat.
Place kale in a single layer on the baking trays.
Pop into oven and bake for 10 - 15 minutes, until crisp. Swap trays half way through.
Delicious!
You can add whatever seasonings you like. Try chilli and paprika instead of salt. Or use sesame oil instead of olive oil. Experiment!
