Ginger Raw Food Bar Recipe
I've been craving a little something that's sweet and healthy to nibble on and quick and easy to make. Lately I've noticed raw food bars making their way on to the shelves at my local health food shop. My favourites are the ones without sugars or preservatives.
This week I've had a go at a homemade version of the Gingerbread Bar I have fallen in love with. It's soooo yummy and tastes just like my distant memory of real, baked in the oven, gingerbread. I've been looking for a gluten, dairy and sugar free gingerbread for years now. Who knew it would end up being a raw food bar?
Ginger Raw Food Bar
2 2/3 cups dates
1 1/3 cups almonds
1 cup pecans
2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp cinnamon
Soak dates in warm water for 30 minutes. Drain and squeeze out excess water.
In a food processor, grind pecans and almonds to a coarse flour.
Add the spices and mix.
Finally, add the dates and whizz till well mixed. This can get bumpy so hold on to your food processor!
Press mixture into a small baking dish.
Refrigerate for 1 hour before cutting into slices.
Store in the fridge.
Try not to scoff them all at once!
